Tofu and Spinach in Peanut-Coconut Sauce
Now, I'm not a vegetarian, and I plan on substituting chicken for the tofu. It sounds absolutely delicious--and easy! Plus I need recipes to use the stockpile of coconut milk that I have.
This is officially on the menu for this week.
